Ordinary green tea is steeped and then thrown away, which means you drink only what dissolves. Matcha is different: the leaf is stone-ground to a powder and whisked into the water, so you consume the leaf itself. That is the entire reason it looks, tastes and behaves so differently from a teabag.

Ceremonial grade is the top tier — young leaves from the first harvest, shade-grown for several weeks before picking, with stems and veins removed before milling. It is smooth and faintly sweet rather than bitter, which is why it is meant to be drunk with water alone. Culinary grade, the cheaper tier, is sharper and made for baking and lattes where sugar and milk cover it.

How to prepare it

  • Sift 1 to 2g into a bowl — matcha clumps, and sifting is the step most people skip and then regret.
  • Add around 60ml of water at roughly 80°C. Not boiling, which scorches the powder and turns it bitter.
  • Whisk briskly in a W or M motion for fifteen to twenty seconds until a fine foam forms.
  • For a latte, use the same base and top with 150ml of steamed milk or oat milk.

Storing it

Matcha fades with light, heat and air. Keep the tin sealed, somewhere cool and dark, and use it within a couple of months of opening — the colour is the giveaway, as it dulls from bright green towards khaki as it ages.
