How to prepare it
- Sift 1 to 2g into a bowl to break up any clumps.
- Add roughly 60ml of water at about 80°C — not boiling, which makes it bitter.
- Whisk briskly for fifteen to twenty seconds until it foams.
- For iced matcha, whisk with a splash of cold water, then pour over ice and top with water or milk.
A note on the larger size
Matcha degrades on contact with air, light and warmth, and a 100g pouch is open for far longer than a 30g tin. Decant it into a small airtight tin and keep the bulk sealed in the fridge if you can. Bright green means fresh; a dull, yellowish-green means it has been open too long.
